Col's magical enchiladas #yum

We all think it’s pretty understandable that whenever we refer to these life-altering enchiladas, using the hashtag #yum is necessary for every time they’re mentioned. In fact, we started just saying “hashtag yum” whenever we said something about nem enchiladas after we consumed them. @Kolleman and @themostchillbro are just too socially networked. Without further stalling for time, here is the recipe Col just e-mailed us, word for word. word.

Serves 6

Roughly 1.5-2 pounds of chicken breast
Shredded mexican cheese 
2 cans of red enchilada sauce
12-15 small flour tortillas
1 box of zatarans spanish rice mix
1 half red bell pepper diced
1 quarter large onion diced
1 medium tomato, diced
1 Large can of refried beans
First, cut the chicken in medium sized strips and cook in a skillet on medium high heat, once some of the juices have cooked out, add about 1-2 tsp each of salt, pepper, thyme, and paprika (you can really use whatever here, these are just flavors that I like) stir and continue cooking until the chicken is cooked through. Once the chicken is finished, drain the juices, shred the cooked chicken and set aside. Now is also a good time to preheat the oven to 400 degrees.
Combine the onions, red pepper and a little bit of cooking oil in a saucepan with a tight fitting lid and cook until the peppers are soft and the onions have a slight brownish color (not quite caramelized). Add the tomato, water and spanish rice mix and follow the directions on the rice box.
Now roll as many enchiladas as you can by rolling up chicken and cheese inside the tortillas (it works better if you fold the edges in before you roll it). This is not a science, the ratio is not all that important, there is no way to ruin these babies. put the rolled enchiladas in a large baking pan and pour both cans of enchilada sauce evenly over the tortillas. Top this with a layer of cheese over the enchiladas, cover the pan with aluminum foil and you’re ready to go. Bake the enchiladas for about 30 minutes with the foil on. While its baking put the refried beans in a bowl that you dont mind putting in the oven and cover them with, (you guessed it) cheese. put the beans in the oven until they’re warmed and the cheese is melted.
After the 30 minutes, turn your oven to broil, take the foil off the pan and put it in for 5-10 minutes or until the cheese on top is the tiniest bit golden (this makes them just a little bit crispy and delicious).
